New Years Eve 2008!!!!!




I have made a few resolutions for 2009 and here they are:


-Continue to go to my spinning classes twice a week


-Get to my goal weight


-run a 5k


-clean out every closet in my house


-pay off my car


-spend more time reading and less watching TV


-replace a few things in my house that continue to annoy me


-plan a little more seriously for starting a family


-stick to our budget with no slip ups


I plan on accomplishing everyone of these things.


Every year my family goes to The Grub Steak in Park City for New Years Eve. The food is awesome and we always look forward to it. These are a few pictures from that night.

Hmmmmm.........BCS more like BSC


I have decided to come out of blogging hibernation for a minute for a good cause. That cause being one of my true passions, Utah Football. As I watched my beloved Utes stomp all over the Crimson Tide I couldn't help but wonder," Why is the BCS such a crock"? Mountain West Schools continue to prove themselves, and continue to get the shaft. I will not accept any Utah retaliation comments on this post. If you honestly still think BYU was a better team this year, you have bigger problems than I can comprehend. Aside from that Utah and BYU fans should unite for this purpose. Because if it would have been the Cougs at the Sugar Bowl, they would have gotten screwed over as well. My friend Erin sent me this article. It very accurately describes my frustrations. Well folks, back into hibernation.

Apple Pie Caramel Apples











These bad boys taste a lot like the ones at Rocky Mountain Chocolate Factory so I decided I must share. Here is the what you will need......

5 Granny Smith Apples

1 Bag Kraft Caramel's

2 TBSP. water

1 bag white chocolate chips

3/4 TBSP. oil

Sugar and Cinnamon

Wash apples and remove stems. Allow to dry completely. Insert Popsicle sticks (these come with the caramel's) into the top of the apple. Melt all caramel's with water in a sauce pan on low heat stirring constantly. Heavily butter a cookie sheet to place caramel apples on. When caramel is completely melted you are ready to dip. I like to tip the sauce pan to one side and Roll the apples in it. You won't be able to get the top so you can just spoon the caramel onto the top half. Allow excess caramel to drip back into pan and then scrape the bottom of the apple so it will sit flat. Allow apples to cool in fridge for about 20 minutes.




While cooling mix a small amount of cinnamon and sugar together for sprinkling. When the caramel has hardened remove apples from fridge. Place about half of the bag of chips in microwave safe bowl and melt in microwave. I do about 20 seconds at a time stirring in between so that they don't burn. Remove melted chocolate from microwave and add oil to make it a little easier to use. Spoon chocolate onto apples covering with a thin layer of white chocolate. Next sprinkle cinnamon/sugar mixture all over the outside of the apple. Put apples back onto cookie sheet and let chill until chocolate has hardened. Remove from fridge and let sit for about 20 minutes before serving. This is Ian's new favorite dessert.




San Fran Trip.......
























































Well we had a great time in Cali but were happy to get back to Lilly. While there we went to the wharf, China Town, Carmel, Monterrey, the Raiders game and a lot of yummy restaurants. Here are a few pics from our trip.

Well kids..........

We are off to San Fran for a long weekend away. We are planning on going to a Raiders game, shopping, and also trying not to get caught up in a some sort of Prop 8 retaliation. Catch ya on the flip side!
