Apple Pie Caramel Apples











These bad boys taste a lot like the ones at Rocky Mountain Chocolate Factory so I decided I must share. Here is the what you will need......

5 Granny Smith Apples

1 Bag Kraft Caramel's

2 TBSP. water

1 bag white chocolate chips

3/4 TBSP. oil

Sugar and Cinnamon

Wash apples and remove stems. Allow to dry completely. Insert Popsicle sticks (these come with the caramel's) into the top of the apple. Melt all caramel's with water in a sauce pan on low heat stirring constantly. Heavily butter a cookie sheet to place caramel apples on. When caramel is completely melted you are ready to dip. I like to tip the sauce pan to one side and Roll the apples in it. You won't be able to get the top so you can just spoon the caramel onto the top half. Allow excess caramel to drip back into pan and then scrape the bottom of the apple so it will sit flat. Allow apples to cool in fridge for about 20 minutes.




While cooling mix a small amount of cinnamon and sugar together for sprinkling. When the caramel has hardened remove apples from fridge. Place about half of the bag of chips in microwave safe bowl and melt in microwave. I do about 20 seconds at a time stirring in between so that they don't burn. Remove melted chocolate from microwave and add oil to make it a little easier to use. Spoon chocolate onto apples covering with a thin layer of white chocolate. Next sprinkle cinnamon/sugar mixture all over the outside of the apple. Put apples back onto cookie sheet and let chill until chocolate has hardened. Remove from fridge and let sit for about 20 minutes before serving. This is Ian's new favorite dessert.




San Fran Trip.......
























































Well we had a great time in Cali but were happy to get back to Lilly. While there we went to the wharf, China Town, Carmel, Monterrey, the Raiders game and a lot of yummy restaurants. Here are a few pics from our trip.

Halloween!!!!!


Well, our Halloween this year was pretty uneventful. We originally had plans to go to Oliver's families cabin in Morgan with Carly, Oliver, Ty and Holly. At the last minute Ian found out that he had to work Saturday so we couldn't go. We decided to go over to my parents house for dinner and then call it a night. When we got there my dad and I started getting out old Halloween costumes and trying them on. This is what we came up with................

Lilly Loo is turning two!




Today is Lilly's second birthday! I woke up this morning to Ian singing Happy Birthday to Lilly at 4:00 AM. We are both off tomorrow, so we are going to take Lilly to the puppy park and also to Petsmart to pick out a few presents. Lilly has honestly been a huge part of our lives for the past two years. She has brought more joy and laughter than anyone can imagine. She has the sweetest disposition and the funniest personality. She is so good with kids and babies and also very obedient. We are lucky to have such a good dog.

People always ask us why we celebrate her birthday when she doesn't understand what's going on? My answer is as follows. Why do we all wrap up presents and put them under the tree on Christmas morning for a 3 month old baby? The answer,because we enjoy doing it. It is not so much that the baby understands what is going on or even cares, but the adults have fun doing it. And we have fun celebrating Lilly's birthday, even if she doesn't know why she gets to have such a fun day. Happy Birthday Lilly May!

Today is my Mom's birthday. We celebrated her birthday on Saturday by going out to dinner at Johnny Carrinos. I am very lucky to have such an awesome Mom who will do anything to help us out. We love you Mom! Have fun in New Orleans!

Camping trip number 2.........






Ian and I went camping this weekend up in the Uinta's. We got up there Friday evening and stayed until Sunday afternoon. It was really relaxing and fun. We spent most of our time just hanging out and reading or going for walks. On Sunday morning we went out on the four wheeler and decided to take Lilly with us for the first time. We put her in my hoodie and let her pop her head out of the neck. Since Ian was driving and I was on the back she was in between us. She just sat and behaved really well the entire time. Now that we know how well she did on it we can take her on all of our rides. We are hoping the weather holds out for a few more weeks so we can fit in another trip.

The return of the long lost husband.........

Ian comes home tonight from Mexico, at 11:30 PM. For anyone that knows me that is seriously about 2 hours past my bedtime. Would it be indecent of me to ask him to take the bus? I am just joking, don't sign me up for the worst wife of the year award quite yet. I am really looking forward to our reunion so I guess I can sacrifice a few hours of beauty sleep, just this once. I have been checking the time about every 30 seconds. I am somewhat lost with out him. Lilly is pretty excited as well, she misses her dad. I am a pathetic creature, I know.

Ian left this morning for Mexico for a week. He went with his company. Not only am I jealous but also really sad. This is the longest we have ever been apart. I am not looking forward to the next 7 days.

Camping.........


















Thursday afternoon we loaded everything up and headed up into the Uinta's. We had checked the weather reports and they were predicting it to be really cold. So we decided against our original plan of staying up at the top and decided to stay at Murdock basin which is about halfway up. We found a killer rough camp spot and made camp. The first night we roasted hot dogs over the fire and they were delicious. Why is it that when you are camping everything tastes so much better?




The second day Ian and I took the 4 wheeler, with Marc, Dust , my Dad, Kayla and Savannah in the jeep behind us down a sweet trail that took us to a really secluded lake. In the mud around the shore we saw bear, mountain lion and moose tracks. They were pretty fresh so that was a cool thing to see. That evening we headed up to Butterfly lake for some hiking and fishing. When we got back we ate Hawaiian haystacks for dinner. Once again they tasted better than ever because we were camping.




Saturday we went up to the lakes again for some more fishing and also canoeing. This was a lot of fun but a little nerve racking. The water up there was freezing along with the air. So if we would have tipped it would have been refreshing to say the least. That night we had Ian's famous tin foil dinners. They were a big hit as always ( we don't tell him that because his ego is big enough already). After dinner we bundled Kayla up in about 5 blankets, a beanie and a coat. Then Marc Kayla and Savannah headed home in the jeep. We played Settlers till the early hours of the morning and then went to bed.




Sunday morning we loaded up camp and headed home. This actually took a lot less time than I thought it would. After hitting the dump station we made it home by about 2:00. We had enough time to do some laundry, unload our stuff and then relax and watch the Olympics. Overall it was a really fun relaxing trip and we can't wait to head out again over Labor day.




On a side note, Lilly loves laying in the sun. Her favorite thing to do while camping is to lay in the warm dirt or roll around int the dirt while playing with Izze. When we left Sunday she looked like a brown dog instead of being black. The white stripe on her face was unrecognizable. Our bath tub that night was totally full of dirt, all from little 14 pound Lilly.

Happy Birthday Kell!


Today is my sister-in-law Kelli's 27th birthday. Kelli is an awesome sister and I am truley greatful to have her as part of the family. She is a great friend and always willing to help out. I talked to Kelli yesterday and asked her if she had any fun plans for the day. She said no, but I hope she finds something exciting and relaxing to do anyways. Monster Trucks!!!!!!!!!!


This weekend was the Monster Trucks at RMR. This is the biggest weekend of the year for us so we were pretty excited. Ian and I, along with Oliver and Carly and some help from Drew worked the track both Saturday and Sunday. It was a VERY long weekend and we were pooped when we got home last night at 11:30. It was a fun, jam packed weekend and now we are in need of another weekend to recover. We are looking forward to a long weekend of camping starting Thursday. Woo Hoo for Monster Trucks!

Zucchini Alfredo.............


It is getting to be the time of year when everyone has lots of extra zucchini because thier gardens are full. We recieved some Zucchini from Kelli last week and I wanted to find some delicous recipes to use it in. I wanted to try something diffrent than the regular Zucchini bread or cake so I found a recipe online. I made this pasta dish last night and loved it. So yummy and easy to make. Here is the recipe for anyone interested in a way to help get rid of some zucchini.


4 cups grated zucchini

4 oz cream cheese ( I used a little more)

1/2 cup milk

2 tablespoons butter ( this was an addition I added, mmmmmm butter)

2 cloves garlic minced ( I used minced garlic out of a jar)

3 T vegetable oil

Fresh Basil (I used dry)

salt and pepper to taste

egg noodles

Parmesan cheese

Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
Heat the oil in a skillet over medium heat. Stir in garlic, and cook 2 minutes. Mix in zucchini, and cook 10 minutes, until some of the moisture has evaporated.
Pour the milk into the skillet, and stir in cream cheese and butter until melted. Mix in basil. Season with salt and pepper, and sprinkle with Parmesan cheese. Serve over the cooked pasta.

Voila!!!!!!!!!! Delish!!!!

Lilly Lake




Last Saturday we headed up into the Unitah's to go fishing and have a BBQ. We started out trying to find a good lake to fish at. One of the lakes we passed was Lilly lake. So naturally Lilly had to get her picture taken by the sign. She was so funny just standing by the sign while we took fifty pictures of her. We found a nice little lake that was not as crowded as the rest called Butterfly Lake. Ian and Dust threw their poles in while I read a book. ( I don't fish, I think it is cruel) Dust caught two and Ian caught one. When Ian caught his I was holding it while he took the hook out so we could throw him back. Ian killed him trying to get the hook out and the little guy started bleeding all over me. So me being the way I am, started to cry my eyes out and wouldn't talk to Ian the rest of the day. And this is why I do not fish......it is an emotional battle for me and I always end up crying.

Ruth's Diner!!!



Last Friday I had a sudden urge to eat somewhere new and exciting. I also wanted to eat somewhere with a nice outdoor dining area. A few friends that I work with suggested we head up to Ruth's diner in the canyon. We decided to invite my parents as well. I was very impressed with the food and the atmosphere. My very favorite thing was their house salad dressing. I am very picky about my dressings and was blown away by theirs. Yummy! I would highly recommend it to anyone looking for good food and outdoor dining.
